Description

A bold fusion of crispy smashburger patties and cheesy golden quesadillas, featuring juicy beef, melted cheddar, and classic burger toppings folded inside a perfectly toasted tortilla.


Ingredients

  • 1 lb ground beef (80/20 blend recommended)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 4 large flour tortillas (burrito-size)
  • 2 cups shredded cheddar cheese (or Mexican cheese blend)
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • Optional: sliced jalapeños
  • Optional: bacon bits
  • Optional: ketchup, mustard, or special sauce for serving

Instructions

  1. In a large bowl, gently combine the ground beef with salt, black pepper, garlic powder, and onion powder. Divide into 8 equal portions and form thin patties.
  2. Heat a cast-iron skillet or griddle over medium-high heat until hot.
  3. Place patties onto the hot surface and immediately smash them down using a spatula to create thin patties. Cook for 2–3 minutes per side until crispy and cooked through.
  4. Transfer cooked patties to a plate lined with paper towels to drain excess fat.
  5. Place a tortilla on a flat surface. On one half, layer 1/4 cup shredded cheese, 2 patties, about 2 tablespoons diced onions, 2 tablespoons diced pickles, and another 1/4 cup cheese.
  6. Fold the tortilla in half to form a half-moon shape.
  7. Wipe the skillet clean and reduce heat to medium. Place the folded quesadilla in the skillet.
  8. Cook for 2–3 minutes per side until the tortilla is golden brown and crispy and the cheese is fully melted.
  9. Remove from heat, let rest for 1 minute, then slice into wedges and serve with desired condiments.

Notes

  • Brush the outside of the tortilla with melted butter or mayonnaise for extra crispiness.
  • Do not overcrowd the pan when cooking patties to ensure proper browning.
  • Allow tortillas to come to room temperature before folding to prevent cracking.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
  • Reheat in a skillet, oven, or air fryer to maintain crispiness.
