A bold fusion of crispy smashburger patties and cheesy golden quesadillas, featuring juicy beef, melted cheddar, and classic burger toppings folded inside a perfectly toasted tortilla.

- 1 lb ground beef (80/20 blend recommended)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 4 large flour tortillas (burrito-size)
- 2 cups shredded cheddar cheese (or Mexican cheese blend)
- 1/2 cup diced onions
- 1/2 cup diced pickles
- Optional: sliced jalapeños
- Optional: bacon bits
- Optional: ketchup, mustard, or special sauce for serving
Instructions
- In a large bowl, gently combine the ground beef with salt, black pepper, garlic powder, and onion powder. Divide into 8 equal portions and form thin patties.
- Heat a cast-iron skillet or griddle over medium-high heat until hot.
- Place patties onto the hot surface and immediately smash them down using a spatula to create thin patties. Cook for 2–3 minutes per side until crispy and cooked through.
- Transfer cooked patties to a plate lined with paper towels to drain excess fat.
- Place a tortilla on a flat surface. On one half, layer 1/4 cup shredded cheese, 2 patties, about 2 tablespoons diced onions, 2 tablespoons diced pickles, and another 1/4 cup cheese.
- Fold the tortilla in half to form a half-moon shape.
- Wipe the skillet clean and reduce heat to medium. Place the folded quesadilla in the skillet.
- Cook for 2–3 minutes per side until the tortilla is golden brown and crispy and the cheese is fully melted.
- Remove from heat, let rest for 1 minute, then slice into wedges and serve with desired condiments.
Notes
- Brush the outside of the tortilla with melted butter or mayonnaise for extra crispiness.
- Do not overcrowd the pan when cooking patties to ensure proper browning.
- Allow tortillas to come to room temperature before folding to prevent cracking.
- Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
- Reheat in a skillet, oven, or air fryer to maintain crispiness.
