- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 cup pumpkin puree
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup peeled and diced apple
- Streusel Topping:
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup cold butter, cut into pieces
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, combine sugar, oil, pumpkin puree, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced apple.
- Prepare the streusel topping: In a small bowl, combine flour, brown sugar, and cold butter. Cut the butter into the mixture using a pastry blender or your fingers until it resembles coarse crumbs. Stir in the pecans.
- Fill each muffin cup about 2/3 full with batter.
- Sprinkle the streusel topping evenly over the muffins.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can substitute the pecans with walnuts.
- For a richer flavor, use brown butter in the streusel topping.
- Store muffins in an airtight container at room temperature for up to 3 days.
