- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 can (15 oz) pumpkin puree
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Pour in vegetable broth and pumpkin puree. Stir well.
- Add ginger, cinnamon, salt, and pepper. Bring to a simmer.
- Reduce heat and cook for 15 minutes, or until flavors are combined.
