- 1 cup orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 teaspoon dried oregano

- 1/4 teaspoon black pepper
- 2 cups fresh spinach, chopped
- 1/4 cup grated Parmesan cheese, for garnish
Instructions
- Brown ground turkey in a large pot over medium-high heat. Drain excess fat.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Stir in diced tomatoes, chicken broth, orzo, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until orzo is cooked through.
- Stir in spinach and cook until wilted, about 2 minutes.
- Serve hot, garnished with Parmesan cheese.

- You can substitute ground chicken for ground turkey.
- Add other vegetables like zucchini or bell peppers.
