Description

Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese, for garnish

Instructions

  1. Brown ground turkey in a large pot over medium-high heat. Drain excess fat.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in diced tomatoes, chicken broth, orzo, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until orzo is cooked through.
