Description

Ingredients

  • 3 large eggs
  • 1 cup dashi stock
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 4 shiitake mushrooms, sliced
  • 4 shrimp, cooked
  • 4 pieces of kamaboko (fish cake), sliced
  • 2 green onions, chopped

Instructions

  1. Whisk eggs lightly in a bowl.
  2. Add dashi stock, soy sauce, and mirin to the eggs. Mix well.
  3. Strain the egg mixture through a fine-mesh sieve for a smoother texture.
  4. Arrange shiitake mushrooms, shrimp, and kamaboko in individual serving cups.
  5. Pour egg mixture into the cups.
  6. Cover cups with lids or aluminum foil.
  7. Steam for 15-20 minutes, or until the custard is set.
  8. Garnish with green onions and serve hot.

Notes

  • Adjust dashi stock to your preference.
