  • 2 carrots, peeled and chopped

  • 1/2 tsp dried rosemary
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth
  • 1 cup frozen peas
  • For the Biscuits:
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup cold butter, cubed
  • 2/3 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned. Remove chicken from skillet and set aside.
  3. Add onion, carrots, and celery to the skillet and cook until softened, about 5-7 minutes. Add garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute more.
  4. Stir in flour until well combined. Gradually add chicken broth, stirring constantly to avoid lumps. Bring to a simmer and cook until slightly thickened, about 5 minutes.
  5. Return chicken to the skillet. Add frozen peas.
  6. In a separate bowl, whisk together flour, baking powder, and salt for the biscuits. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Add milk and stir until just combined.
  8. Drop spoonfuls of biscuit dough over the chicken mixture in the skillet.
  9. Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and the filling is bubbly.
  10. Let cool slightly before serving.
