Description
Easy chicken noodle soup made in a crock pot.
Ingredients

- 1 lb chicken breasts
- 8 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups egg noodles
Instructions
- Place chicken breasts, chicken broth, carrots, celery, onion, thyme, salt, and pepper in a crock pot.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred with two forks. Return chicken to the crock pot.
- Stir in egg noodles and cook on high for 30 minutes, or until noodles are tender.
- Serve hot.
Notes
- Add more chicken broth if soup is too thick.
- For a richer flavor, use bone-in chicken thighs.
- Store leftovers in the refrigerator for up to 3 days.
