Description

Simple and flavorful chicken pineapple recipe inspired by family traditions and global flavors.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Cooked rice, for serving

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and cornstarch.
  2. Add chicken to the marinade and let it sit for at least 15 minutes.
  3. Heat vegetable oil in a skillet or wok over medium-high heat.
  4. Add marinated chicken and cook until browned and cooked through.
  5. Add pineapple chunks to the skillet and cook for another 3-5 minutes until heated through.
  6. Serve hot over cooked rice.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the marinade.
