Ingredients

- 1 lb chicken breast, cubed
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- Cooked rice, for serving
Instructions
- In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and cornstarch.
- Add chicken to the marinade and let it sit for at least 15 minutes.
- Heat vegetable oil in a skillet or wok over medium-high heat.
- Add marinated chicken and cook until browned and cooked through.
- Add pineapple chunks to the skillet and cook for another 3-5 minutes until heated through.
- Serve hot over cooked rice.
Notes
- For extra flavor, add a pinch of red pepper flakes to the marinade.
- Garnish with sesame seeds and chopped green onions before serving.
