- Separate the egg whites from the yolks into two separate bowls.
- Whisk the egg whites until stiff peaks form. Season with salt and pepper.
- Gently fold in Parmesan cheese and chives, if desired.
- Place the toast on a baking sheet.
- Spoon the whipped egg whites onto the toast, creating a nest-like shape with a well in the center.
- Bake for 3-5 minutes, or until the egg whites are lightly golden brown.
- Carefully place an egg yolk in the center of each egg white nest.
- Bake for another 2-3 minutes, or until the yolks are cooked to your liking.
- Season with additional salt, pepper, and red pepper flakes, if desired. Serve immediately.
