Ingredients

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cooked pasta (optional)
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Pour in vegetable broth and add diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15-20 minutes.
  6. If using pasta, add it during the last 10 minutes of simmering.
  7. Stir in cannellini beans and heat through.
  8. Garnish with fresh parsley before serving.
