- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped

- 8 cups vegetable broth

- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1 cup cooked pasta (optional)
- 1 (15 ounce) can cannellini beans, rinsed and drained
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more.
- Pour in vegetable broth and add diced tomatoes, oregano, basil, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes.
- If using pasta, add it during the last 10 minutes of simmering.
- Stir in cannellini beans and heat through.
- Garnish with fresh parsley before serving.
