- 3–4 pound corned beef brisket
- 1 large onion, quartered
- 4 carrots, peeled and chopped
- 4 potatoes, peeled and quartered
- 1 head of cabbage, cored and chopped
- 1 bottle (12 ounces) of beer or beef broth
- 1 packet of pickling spice (usually comes with the corned beef)
Instructions
- Place the onion, carrots, and potatoes in the bottom of your slow cooker.
- Rinse the corned beef under cold water and place it on top of the vegetables.
- Sprinkle the pickling spice over the corned beef.
- Pour the beer or beef broth over the corned beef.
- Cover and cook on low for 8 hours, or on high for 4-5 hours, until the corned beef is tender.
- Add the cabbage to the slow cooker during the last 2 hours of cooking.
- Remove the corned beef and vegetables from the slow cooker. Slice the corned beef against the grain and serve with the cooked vegetables.
Notes
- For extra flavor, you can sear the corned beef in a hot skillet before adding it to the slow cooker.
- If you don’t have beer or beef broth, you can use water.
- Serve with horseradish sauce or mustard.
