Description

Make flavorful corned beef in your slow cooker with this easy recipe. Perfect for family meals and holidays.


Ingredients

  • 34 pound corned beef brisket
  • 1 large onion, quartered
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and quartered
  • 1 head of cabbage, cored and chopped
  • 1 bottle (12 ounces) of beer or beef broth
  • 1 packet of pickling spice (usually comes with the corned beef)

Instructions

  1. Place the onion, carrots, and potatoes in the bottom of your slow cooker.
  2. Rinse the corned beef under cold water and place it on top of the vegetables.
  3. Sprinkle the pickling spice over the corned beef.
  4. Pour the beer or beef broth over the corned beef.
  5. Cover and cook on low for 8 hours, or on high for 4-5 hours, until the corned beef is tender.
  6. Add the cabbage to the slow cooker during the last 2 hours of cooking.
  7. Remove the corned beef and vegetables from the slow cooker. Slice the corned beef against the grain and serve with the cooked vegetables.

Notes

  • For extra flavor, you can sear the corned beef in a hot skillet before adding it to the slow cooker.
  • If you don’t have beer or beef broth, you can use water.
  • Serve with horseradish sauce or mustard.
