- 4 large russet potatoes, peeled and cubed
- 6 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, combine potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- While potatoes are simmering, melt butter in a separate saucepan. Whisk in flour and cook for 1 minute to create a roux.
- Slowly whisk the roux into the potato mixture. Stir until thickened.
- Stir in heavy cream and sour cream. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Ladle soup into bowls and top with cheddar cheese, bacon crumbles, and green onions.
- Serve hot and enjoy.

- For a smoother soup, use an immersion blender to partially blend the soup before adding the cream.
- Adjust the amount of chicken broth for desired consistency.
