Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. While potatoes are simmering, melt butter in a separate saucepan. Whisk in flour and cook for 1 minute to create a roux.
  3. Slowly whisk the roux into the potato mixture. Stir until thickened.
  4. Stir in heavy cream and sour cream. Heat through, but do not boil.
  5. Season with salt and pepper to taste.
  6. Ladle soup into bowls and top with cheddar cheese, bacon crumbles, and green onions.
