Description

Ingredients

  • 1 delicata squash, seeded and cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh sage leaves for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Toss the cubed delicata squash with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender.
  2. While the squash is roasting, sauté the chopped onion in a large pot over medium heat until softened. Add the minced garlic and cook for another minute until fragrant.
  3. Add the orzo pasta to the pot and toast for 2-3 minutes, stirring occasionally.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10-12 minutes, or until the orzo is cooked and the broth is absorbed.
  5. Stir in the roasted delicata squash, heavy cream, and Parmesan cheese. Season with salt and pepper to taste.
  6. Garnish with fresh sage leaves, if desired, and serve immediately.

Notes

  • You can substitute butternut squash for delicata squash.
  • For a vegan option, use plant-based cream and cheese alternatives.
  • Add a pinch of red pepper flakes for a little heat.
