Ingredients

  • 4 cups potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. In a large pot, combine potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. While potatoes are simmering, melt butter in a separate saucepan. Whisk in flour until smooth. Gradually whisk in milk until the mixture thickens, about 5 minutes.
  3. Once potatoes are tender, mash them slightly.
  4. Pour the milk mixture into the potato mixture. Stir in heavy cream, salt, and pepper. Heat through.
  5. Garnish with green onions before serving.
