  • 1.5 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 4 cups chicken broth
  • 2 (15-ounce) cans great northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, cilantro, avocado

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and green bell pepper and cook for another 2 minutes.
  3. Stir in chicken broth, great northern beans, green chilies, cumin, oregano, and cayenne pepper (if using). Bring to a simmer.
  4. Reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Stir in cream cheese and sour cream until fully melted and combined.
  6. Add shredded chicken and heat through. Season with salt and pepper to taste.
  7. Serve hot and garnish with your favorite toppings.
