Description

Make a simple chicken pot pie in your crockpot.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup mixed vegetables, frozen
  • 1/2 cup chopped onion
  • 1/4 teaspoon black pepper
  • 1 package (14.1 ounce) refrigerated pie crusts

Instructions

  1. Place chicken in the bottom of a crockpot.
  2. In a bowl, mix together cream of chicken soup, cream of mushroom soup, mixed vegetables, onion, and pepper. Pour over the chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, cut the pie crusts into 1-inch strips. Place the strips over the chicken mixture in a lattice pattern.
  5. Cover and cook until the crust is golden brown, about 30 minutes.
  6. Let stand for 10 minutes before serving.

Notes

  • For a richer flavor, add a tablespoon of butter to the chicken mixture before cooking.
  • You can substitute other vegetables for the mixed vegetables, such as peas, carrots, or potatoes.
