- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 9 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Brown ground beef in a large pot over medium-high heat. Drain any excess grease.
- Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
- Add broken lasagna noodles to the soup and cook until tender, about 10-12 minutes.
- In a small bowl, combine ricotta cheese and Parmesan cheese.
- Ladle soup into bowls and top with a spoonful of ricotta mixture and fresh basil.

- For a vegetarian version, replace ground beef with plant-based crumbles.
