Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 9 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Brown ground beef in a large pot over medium-high heat. Drain any excess grease.
  2. Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, and red pepper flakes. Season with salt and pepper to taste.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes.
  5. Add broken lasagna noodles to the soup and cook until tender, about 10-12 minutes.
  6. In a small bowl, combine ricotta cheese and Parmesan cheese.
  7. Ladle soup into bowls and top with a spoonful of ricotta mixture and fresh basil.

  • For a vegetarian version, replace ground beef with plant-based crumbles.
