- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, cold and cubed
- 1/4 cup ice water
- 1 cup pecan halves
- 1 cup dark corn syrup
- 3/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Prepare the crust: In a bowl, mix flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms.
- Wrap dough and chill for 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll out dough and place in a 9-inch pie dish. Crimp edges.
- Prepare the filling: In a bowl, combine corn syrup, sugar, melted butter, eggs, vanilla extract, and salt. Mix well.
- Arrange pecan halves on the bottom of the pie crust.
- Pour filling over pecans.
- Bake for 50-60 minutes, or until filling is set but still slightly jiggly.
- Let cool completely before serving.
Notes
- For a crispier crust, blind bake the crust for 15 minutes before adding the filling.
- If the crust edges brown too quickly, cover them with foil.
- Store leftover pie in the refrigerator.
