- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 cup chopped shallots
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 teaspoon Italian seasoning
- 1/4 cup sun-dried tomatoes, oil-packed, drained
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- Melt butter in the same skillet. Add garlic and shallots and cook until softened, about 2 minutes.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream, Parmesan cheese, Italian seasoning, and sun-dried tomatoes.
- Return chicken to the skillet and simmer for 5 minutes, or until sauce has thickened slightly.
- Stir in fresh basil. Serve hot over pasta, rice, or mashed potatoes.
Notes
- For a richer flavor, use bone-in, skin-on chicken thighs.
- Adjust the amount of Parmesan cheese to your liking.
- Serve with a side of steamed vegetables or a salad.
