Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup chopped shallots
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomatoes, oil-packed, drained

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Melt butter in the same skillet. Add garlic and shallots and cook until softened, about 2 minutes.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream, Parmesan cheese, Italian seasoning, and sun-dried tomatoes.
  6. Return chicken to the skillet and simmer for 5 minutes, or until sauce has thickened slightly.
  7. Stir in fresh basil. Serve hot over pasta, rice, or mashed potatoes.

Notes

  • For a richer flavor, use bone-in, skin-on chicken thighs.
  • Adjust the amount of Parmesan cheese to your liking.
  • Serve with a side of steamed vegetables or a salad.
