- 1 pound potatoes, cut into 1-inch cubes
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Toss potatoes with 1 tablespoon olive oil, salt, and pepper.
- Heat remaining olive oil in a large skillet over medium-high heat.
- Add potatoes to the skillet and cook until golden brown and tender, about 15-20 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and thyme; cook for 1 minute until fragrant.
- Add steak cubes to the skillet and cook to your desired doneness, about 3-5 minutes for medium-rare.
- Return potatoes to the skillet. Toss everything together to coat with the garlic butter sauce.
- Garnish with fresh parsley and serve immediately.
Notes
- For extra flavor, add a pinch of red pepper flakes to the garlic butter sauce.
