- 3/4 cup packed brown sugar
- 1/2 cup molasses
- 1 large egg
- 1 tsp vanilla extract
Instructions
- In a large bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and nutmeg.
- In a separate bowl, cream together butter and brown sugar until light and fluffy.
- Beat in molasses, egg, and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Wrap dough in plastic wrap and chill for at least 2 hours.
- Preheat oven to 375°F (190°C).
- Roll out dough on a lightly floured surface to 1/4-inch thickness.
- Cut out shapes with cookie cutters.
- Place cookies on ungreased baking sheets.
- Bake for 8-10 minutes, or until edges are lightly browned.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Decorate with icing as desired.
Notes
- For softer cookies, bake for less time.
- For chewier cookies, use more molasses.
