Description

Ground turkey black bean enchiladas are a healthy and flavorful twist on a classic Mexican dish. Enjoy this satisfying meal with your family.


Ingredients

  • 1 pound ground turkey
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 packet taco seasoning
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 (28 ounce) can enchilada sauce

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Brown ground turkey in a large skillet over medium heat. Drain excess grease.
  3. Stir in black beans, corn, diced tomatoes and green chilies, and taco seasoning. Simmer for 5 minutes.
  4. Warm tortillas in the microwave for 30 seconds to make them more pliable.
  5. Spread a thin layer of enchilada sauce in a 9×13 inch baking dish.
  6. Fill each tortilla with the turkey mixture and roll up. Place enchiladas seam-side down in the baking dish.
  7. Pour remaining enchilada sauce over the enchiladas and sprinkle with cheddar cheese.
  8. Bake for 20-25 minutes, or until cheese is melted and bubbly.

Notes

  • You can substitute ground chicken or beef for ground turkey.
  • Add your favorite toppings such as sour cream, guacamole, or salsa.
  • For a spicier dish, use hot enchilada sauce or add a pinch of cayenne pepper to the turkey mixture.
