- 1 pound ground turkey
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 packet taco seasoning
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 1 (28 ounce) can enchilada sauce
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Brown ground turkey in a large skillet over medium heat. Drain excess grease.
- Stir in black beans, corn, diced tomatoes and green chilies, and taco seasoning. Simmer for 5 minutes.
- Warm tortillas in the microwave for 30 seconds to make them more pliable.
- Spread a thin layer of enchilada sauce in a 9×13 inch baking dish.
- Fill each tortilla with the turkey mixture and roll up. Place enchiladas seam-side down in the baking dish.
- Pour remaining enchilada sauce over the enchiladas and sprinkle with cheddar cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- You can substitute ground chicken or beef for ground turkey.
- Add your favorite toppings such as sour cream, guacamole, or salsa.
- For a spicier dish, use hot enchilada sauce or add a pinch of cayenne pepper to the turkey mixture.
