Halloween Stuffed Peppers are a festive and flavorful dish perfect for a spooky celebration. These bell peppers are stuffed with a savory mixture and decorated to resemble jack-o’-lanterns.

- 4 bell peppers (orange, yellow, or red)
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Shredded cheddar cheese for topping
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Carve jack-o’-lantern faces into the peppers.
- In a large skillet, brown ground beef over medium heat. Drain any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in tomato sauce, diced tomatoes, rice, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes.
- Spoon the beef mixture into the carved bell peppers.
- Place the stuffed peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
- Bake for 30-40 minutes, or until the peppers are tender.
- Top with shredded cheddar cheese during the last few minutes of baking, until melted.
Notes
- For a vegetarian option, substitute the ground beef with lentils or quinoa.
- You can add other vegetables to the filling, such as corn, black beans, or zucchini.
- Adjust the amount of chili powder and cumin to your preference.
