Description

Halloween Stuffed Peppers are a festive and flavorful dish perfect for a spooky celebration. These bell peppers are stuffed with a savory mixture and decorated to resemble jack-o’-lanterns.


Ingredients

  • 4 bell peppers (orange, yellow, or red)
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheddar cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Carve jack-o’-lantern faces into the peppers.
  3. In a large skillet, brown ground beef over medium heat. Drain any excess grease.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in tomato sauce, diced tomatoes, rice, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  6. Spoon the beef mixture into the carved bell peppers.
  7. Place the stuffed peppers in a baking dish and add about 1/2 inch of water to the bottom of the dish.
  8. Bake for 30-40 minutes, or until the peppers are tender.
  9. Top with shredded cheddar cheese during the last few minutes of baking, until melted.

Notes

  • For a vegetarian option, substitute the ground beef with lentils or quinoa.
  • You can add other vegetables to the filling, such as corn, black beans, or zucchini.
  • Adjust the amount of chili powder and cumin to your preference.
