Description

Jack-o’-lantern empanadas are savory hand pies filled with a flavorful mixture, perfect for a festive Halloween treat.


Ingredients

  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, brown ground beef over medium heat. Drain excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in chili powder, cumin, salt, and pepper.
  5. Remove from heat and stir in cheddar cheese.
  6. Unroll pie crusts on a lightly floured surface.
  7. Use a jack-o’-lantern cookie cutter to cut out empanada shapes.
  8. Place a spoonful of the beef mixture in the center of half of the cutouts.
  9. Top with the remaining cutouts and crimp the edges with a fork to seal.
  10. Brush the tops with beaten egg.
  11. Bake for 15-20 minutes, or until golden brown.
  12. Let cool slightly before serving.

Notes

  • You can substitute ground beef with ground turkey or chicken.
  • Add other vegetables like bell peppers or corn to the filling.
  • For a spicier empanada, add a pinch of cayenne pepper to the filling.
  • Serve with your favorite dipping sauce, such as sour cream or salsa.
