Jack-o’-lantern empanadas are savory hand pies filled with a flavorful mixture, perfect for a festive Halloween treat.

- 1 package (14.1 ounces) refrigerated pie crusts
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1 egg, beaten
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, brown ground beef over medium heat. Drain excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in chili powder, cumin, salt, and pepper.
- Remove from heat and stir in cheddar cheese.
- Unroll pie crusts on a lightly floured surface.
- Use a jack-o’-lantern cookie cutter to cut out empanada shapes.
- Place a spoonful of the beef mixture in the center of half of the cutouts.
- Top with the remaining cutouts and crimp the edges with a fork to seal.
- Brush the tops with beaten egg.
- Bake for 15-20 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
- You can substitute ground beef with ground turkey or chicken.
- Add other vegetables like bell peppers or corn to the filling.
- For a spicier empanada, add a pinch of cayenne pepper to the filling.
- Serve with your favorite dipping sauce, such as sour cream or salsa.
