Description

Ingredients

  • 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
  • 1/2 cup BBQ sauce
  • 1/4 cup water
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Hamburger buns for serving
  • Optional toppings: coleslaw, pickles

Instructions

  1. Shred the jackfruit with your fingers or two forks, removing the core pieces.
  2. In a saucepan, combine the shredded jackfruit, BBQ sauce, water, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Season with salt and pepper.
  3. Bring the mixture to a simmer over medium heat. Reduce heat and cook for 20-25 minutes, or until the jackfruit is tender and the sauce has thickened, stirring occasionally.
  4. Toast hamburger buns.
  5. Pile the jackfruit mixture onto the buns.
  6. Add your favorite toppings like coleslaw or pickles.
  7. Serve immediately.
