- 1 can (20 oz) young green jackfruit in water or brine, drained and rinsed
- 1/2 cup BBQ sauce
- 1/4 cup water
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- Hamburger buns for serving
- Optional toppings: coleslaw, pickles
Instructions
- Shred the jackfruit with your fingers or two forks, removing the core pieces.
- In a saucepan, combine the shredded jackfruit, BBQ sauce, water, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Season with salt and pepper.
- Bring the mixture to a simmer over medium heat. Reduce heat and cook for 20-25 minutes, or until the jackfruit is tender and the sauce has thickened, stirring occasionally.
- Toast hamburger buns.
- Pile the jackfruit mixture onto the buns.
- Add your favorite toppings like coleslaw or pickles.
- Serve immediately.
Notes
- Adjust BBQ sauce to your preference.
- For a smokier flavor, add a drop of liquid smoke.
- Jackfruit can be cooked in a slow cooker on low for 4-6 hours.
