Ingredients

  • 4 bell peppers (various colors)
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cauliflower rice
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons tomato paste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut bell peppers in half lengthwise and remove seeds.
  3. Brown ground beef in a skillet over medium heat. Drain any excess grease.
  4. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  5. Stir in Italian seasoning, salt, pepper, cauliflower rice, tomato paste, and half of the cheddar cheese.
  6. Spoon the beef mixture into the bell pepper halves.
  7. Place the stuffed bell peppers in a baking dish.
  8. Bake for 25-30 minutes, or until the peppers are tender.
  9. Sprinkle with the remaining cheddar cheese and bake for another 5 minutes, or until the cheese is melted and bubbly.

Notes

  • You can substitute ground beef with ground turkey or chicken.
  • Add your favorite keto-friendly vegetables to the filling, such as mushrooms or spinach.
  • For a spicier dish, add a pinch of red pepper flakes.
