- 4 bell peppers (various colors)
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cauliflower rice
- 1/2 cup shredded cheddar cheese
- 2 tablespoons tomato paste
Instructions
- Preheat oven to 375°F (190°C).
- Cut bell peppers in half lengthwise and remove seeds.
- Brown ground beef in a skillet over medium heat. Drain any excess grease.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in Italian seasoning, salt, pepper, cauliflower rice, tomato paste, and half of the cheddar cheese.
- Spoon the beef mixture into the bell pepper halves.
- Place the stuffed bell peppers in a baking dish.
- Bake for 25-30 minutes, or until the peppers are tender.
- Sprinkle with the remaining cheddar cheese and bake for another 5 minutes, or until the cheese is melted and bubbly.
Notes
- You can substitute ground beef with ground turkey or chicken.
- Add your favorite keto-friendly vegetables to the filling, such as mushrooms or spinach.
- For a spicier dish, add a pinch of red pepper flakes.
