Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the skillet and cook until softened.
  3. Transfer the ground beef mixture to a crockpot.
  4. Pour in the crushed tomatoes, tomato sauce, and beef broth.
  5. Stir in the dried oregano, dried basil, red pepper flakes (if using), salt, and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. During the last 30 minutes of cooking, stir in the broken lasagna noodles.
  8. Cook until the noodles are tender.
  9. Serve hot, topped with a dollop of ricotta cheese, grated Parmesan cheese, and fresh basil.

Notes

  • You can substitute ground turkey or Italian sausage for ground beef.
  • Adjust the amount of red pepper flakes to your spice preference.
  • For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the soup during the last 30 minutes of cooking.
  • Store leftovers in the refrigerator for up to 3 days.
