- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet and cook until softened.
- Transfer the ground beef mixture to a crockpot.
- Pour in the crushed tomatoes, tomato sauce, and beef broth.
- Stir in the dried oregano, dried basil, red pepper flakes (if using), salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, stir in the broken lasagna noodles.
- Cook until the noodles are tender.
- Serve hot, topped with a dollop of ricotta cheese, grated Parmesan cheese, and fresh basil.
Notes
- You can substitute ground turkey or Italian sausage for ground beef.
- Adjust the amount of red pepper flakes to your spice preference.
- For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the soup during the last 30 minutes of cooking.
- Store leftovers in the refrigerator for up to 3 days.
