- 1 pound Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 (28 ounce) can crushed tomatoes
- 4 cups beef broth
- 8 ounces lasagna noodles, broken
- 1 1/2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Brown the Italian sausage in a large pot over medium heat. Drain any excess grease.
- Add the chopped onion and minced garlic to the pot. Cook until softened, about 5 minutes.
- Stir in the dried oregano and red pepper flakes. Cook for 1 minute more.
- Pour in the crushed tomatoes and beef broth. Bring to a simmer.
- Add the broken lasagna noodles to the pot. Cook until the noodles are tender, about 10-12 minutes.
- In a small bowl, combine the ricotta cheese, Parmesan cheese, and parsley.
- Ladle the soup into bowls and top with a dollop of the ricotta mixture.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For a vegetarian option, omit the sausage and add extra vegetables like mushrooms, zucchini, or spinach.
- You can use ground beef instead of Italian sausage.
- Store leftover soup in an airtight container in the refrigerator for up to 3 days.
