- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Brown ground beef in a large pot. Drain excess fat.
- Add onion and garlic to the pot and cook until softened.
- Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
- Add lasagna noodles and cook until tender, about 10-15 minutes.
- Ladle soup into bowls and top with ricotta cheese, Parmesan cheese, and fresh basil leaves.
Notes
- For a richer flavor, use Italian sausage instead of ground beef.
- Add vegetables like bell peppers, zucchini, or spinach for extra nutrients.
- Use a slow cooker by browning the beef and then adding all ingredients to the slow cooker. Cook on low for 6-8 hours.
