- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.
- Add garlic and sun-dried tomatoes to the skillet and cook for 1 minute, until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese, oregano, and red pepper flakes (if using).
- Let the sauce simmer for 5-7 minutes, or until slightly thickened.
- Return chicken to the skillet and spoon sauce over the top.
- Simmer for another 2-3 minutes, until chicken is heated through.
- Garnish with fresh basil and serve.
Notes
- Serve over pasta, rice, or mashed potatoes.
- Add spinach or other vegetables to the sauce for extra nutrients.
- Adjust the amount of red pepper flakes to your preference.
- For a thicker sauce, whisk in 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water.
