Miso soup is a savory and umami-rich Japanese soup.
Ingredients

- 4 cups dashi (Japanese soup stock)
- 2 tablespoons miso paste (shiro or awase)
- 1/4 cup wakame seaweed, soaked in water
- 1/4 cup tofu, cubed
- 2 green onions, thinly sliced
Instructions
- Heat dashi in a pot over medium heat. Do not boil.
- In a small bowl, whisk miso paste with a little of the dashi until smooth.
- Add miso mixture to the pot and stir well.
- Add wakame and tofu to the pot.
- Simmer for 2-3 minutes, do not boil.
- Garnish with green onions and serve hot.
Notes
- Adjust miso amount to your taste.
- Use different types of tofu.
- Add other vegetables like mushrooms or carrots.
