Description

Okonomiyaki is a savory Japanese pancake containing a variety of ingredients.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup dashi (Japanese soup stock)
  • 2 large eggs
  • 1/4 head of cabbage, thinly sliced
  • 1/2 cup sliced pork belly or bacon
  • 1/4 cup dried shrimp (optional)
  • 1/4 cup chopped green onions
  • Okonomiyaki sauce
  • Japanese mayonnaise
  • Aonori (dried seaweed flakes)
  • Katsuobushi (bonito flakes)

Instructions

  1. In a large bowl, whisk together flour and dashi.
  2. Add eggs and mix well.
  3. Incorporate cabbage, pork belly (or bacon), dried shrimp (if using), and green onions into the batter.
  4. Heat a lightly oiled griddle or large frying pan over medium heat.
  5. Pour batter onto the griddle to form a pancake.
  6. Cook for 5-7 minutes per side, or until golden brown and cooked through.
  7. Transfer the okonomiyaki to a plate.
  8. Drizzle with okonomiyaki sauce and Japanese mayonnaise.
  9. Sprinkle with aonori and katsuobushi.
  10. Serve immediately.

Notes

  • Adjust the amount of dashi for desired batter consistency.
  • You can add other ingredients such as cheese, mochi, or kimchi.
  • If you don’t have okonomiyaki sauce, use a mixture of Worcestershire sauce, ketchup, and soy sauce.
