- 1 cup dashi (Japanese soup stock)
- 2 large eggs
- 1/4 head of cabbage, thinly sliced
- 1/2 cup sliced pork belly or bacon
- 1/4 cup dried shrimp (optional)
- 1/4 cup chopped green onions
- Okonomiyaki sauce
- Japanese mayonnaise
- Aonori (dried seaweed flakes)
- Katsuobushi (bonito flakes)
Instructions
- In a large bowl, whisk together flour and dashi.
- Add eggs and mix well.
- Incorporate cabbage, pork belly (or bacon), dried shrimp (if using), and green onions into the batter.
- Heat a lightly oiled griddle or large frying pan over medium heat.
- Pour batter onto the griddle to form a pancake.
- Cook for 5-7 minutes per side, or until golden brown and cooked through.
- Transfer the okonomiyaki to a plate.
- Drizzle with okonomiyaki sauce and Japanese mayonnaise.
- Sprinkle with aonori and katsuobushi.
- Serve immediately.
Notes
- Adjust the amount of dashi for desired batter consistency.
- You can add other ingredients such as cheese, mochi, or kimchi.
- If you don’t have okonomiyaki sauce, use a mixture of Worcestershire sauce, ketchup, and soy sauce.
