Ingredients

  • 6 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional toppings: shredded cheese, bacon bits, sour cream, chopped chives

Instructions

  1. Place cubed potatoes and chicken broth in a pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  2. While potatoes are simmering, melt butter in a separate saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until the mixture thickens.
  3. Pour the milk mixture into the pot with the potatoes. Stir in salt and pepper.
  4. Simmer for another 5 minutes, stirring occasionally.
  5. Serve hot with your favorite toppings.

Notes

  • For a thicker soup, mash some of the potatoes before adding the milk mixture.
