- 6 medium potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: shredded cheese, bacon bits, sour cream, chopped chives
Instructions
- Place cubed potatoes and chicken broth in a pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- While potatoes are simmering, melt butter in a separate saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until the mixture thickens.
- Pour the milk mixture into the pot with the potatoes. Stir in salt and pepper.
- Simmer for another 5 minutes, stirring occasionally.
- Serve hot with your favorite toppings.
Notes
- For a thicker soup, mash some of the potatoes before adding the milk mixture.
