- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) cold unsalted butter, cubed
- 1 cup pumpkin puree
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1 cup dried cranberries
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
- Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together pumpkin puree, egg, vanilla extract, and pumpkin pie spice.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Stir in dried cranberries.
- Press half of the oat mixture into the prepared baking pan.
- Spread the remaining oat mixture evenly over the top.
- Bake for 25-30 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- For a healthier option, you can substitute applesauce for some of the butter.
- Add nuts like pecans or walnuts for extra crunch.
- Store in an airtight container at room temperature for up to 3 days.
