Description

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) cold unsalted butter, cubed
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine oats, flour, brown sugar, baking soda, and salt.
  3. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together pumpkin puree, egg, vanilla extract, and pumpkin pie spice.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Stir in dried cranberries.
  7. Press half of the oat mixture into the prepared baking pan.
  8. Spread the remaining oat mixture evenly over the top.
  9. Bake for 25-30 minutes, or until golden brown.
  10. Let cool completely before cutting into bars.

Notes

  • For a healthier option, you can substitute applesauce for some of the butter.
  • Add nuts like pecans or walnuts for extra crunch.
