Enjoy a comforting Ramen carbonara. It is a quick and delicious twist on the classic Italian dish.

- 2 packets Ramen noodles
- 4 slices bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons heavy cream
- Salt and black pepper to taste
- Optional: chopped parsley for garnish
Instructions
- Cook Ramen noodles according to package directions, without seasoning packet. Reserve 1/2 cup of the cooking water before draining.
- While noodles cook, fry diced bacon in a large skillet until crispy. Remove bacon and set aside, reserving 1 tablespoon of bacon fat in the skillet.
- Add minced garlic to the skillet with bacon fat and sauté for 1 minute until fragrant.
- In a bowl, whisk together eggs, Parmesan cheese, and heavy cream. Season with salt and black pepper.
- Add drained Ramen noodles to the skillet with garlic. Pour egg mixture over the noodles, tossing quickly to coat. Add a little of the reserved cooking water at a time, if needed, to create a creamy sauce.
- Stir in crispy bacon. Serve immediately, garnished with chopped parsley, if desired.
Notes
- Adjust the amount of reserved cooking water to reach your desired sauce consistency.
- For a richer flavor, use guanciale instead of bacon.
- Add a pinch of red pepper flakes for a spicy kick.
