- 8 small tortillas
- 4 slices cheddar cheese, quartered

Instructions
- Form ground beef into 8 small, thin patties. Season with salt and pepper.
- Heat a large skillet over medium-high heat with oil.
- Smash each patty onto the hot skillet and cook for 2-3 minutes per side until browned and crispy.
- Place cheese quarters on top of each patty during the last minute of cooking.
- Warm tortillas in a separate pan or microwave.
