- 1 tablespoon olive oil
- 1 cup fideo pasta
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: cheese, avocado, cilantro
Instructions
- Heat olive oil in a pot over medium heat.
- Add fideo pasta and cook, stirring occasionally, until golden brown.
- Add onion and garlic and cook until softened, about 3 minutes.
- Pour in chicken broth and diced tomatoes. Stir in chili powder and cumin.
- Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until pasta is tender.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a vegetarian version, use vegetable broth.
- Add shredded chicken for a heartier soup.
