Description

Sopita is a comforting Mexican noodle soup perfect for a quick and easy meal. This recipe is versatile and can be adapted to your taste.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup small pasta (fideo, stars, or letters)
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: shredded chicken, vegetables (carrots, celery, zucchini)

Instructions

  1. Heat olive oil in a pot over medium heat.
