Ingredients

  • 4 oz sharp cheddar cheese, shredded
  • 2 oz cold unsalted butter, cubed
  • 1/2 cup sourdough discard, unfed
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • Pinch of cayenne pepper (optional)
  • 2 tablespoons cold water (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a food processor, combine cheddar cheese, butter, sourdough discard, flour, salt, paprika, and cayenne pepper (if using).
  3. Pulse until the mixture forms a coarse, crumbly dough. If the dough seems too dry, add cold water, 1 tablespoon at a time, until it comes together.
  4. Turn the dough out onto a lightly floured surface.
  5. Roll the dough out to about 1/8 inch thickness.
  6. Use a knife or pizza cutter to cut the dough into small squares.
  7. Transfer the squares to a baking sheet lined with parchment paper.
  8. Use a toothpick or skewer to poke a hole in the center of each square.
  9. Bake for 12-15 minutes, or until the edges are golden brown and the crackers are firm.
  10. Let the crackers cool completely on the baking sheet before serving.
  11. Store in an airtight container at room temperature.

Notes

  • For a sharper flavor, use extra-sharp cheddar cheese.
  • Adjust the amount of cayenne pepper to your preference.
  • If you don’t have a food processor, you can mix the ingredients by hand using a pastry blender or your fingers.
