These stuffed bell peppers with ground beef are an easy and delicious meal. This recipe is perfect for a family dinner.

- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 1 (15 ounce) can tomato sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 bell peppers, any color
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
- Stir in cooked rice, onion, tomato sauce, Italian seasoning, salt, and pepper.
- Cut the tops off of the bell peppers and remove the seeds and membranes.
- Stuff each bell pepper with the ground beef mixture.
- Place the stuffed bell peppers in a baking dish and bake for 30-40 minutes, or until the peppers are tender.
- Sprinkle with shredded cheddar cheese and bake for another 5 minutes, or until the cheese is melted.
- Let stand for 5 minutes before serving.
Notes
- You can use any color bell peppers you like.
- For a healthier option, use lean ground beef or ground turkey.
- Add other vegetables like corn, black beans, or diced tomatoes to the filling.
- Top with a dollop of sour cream or salsa before serving.
