- 4 bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 1 (15 ounce) can tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Stir in the cooked rice, onion, 1/2 cup of tomato sauce, Italian seasoning, salt, and pepper.
- Fill each bell pepper with the ground beef mixture.
- Place the stuffed bell peppers in a baking dish and pour the remaining tomato sauce over the top.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and sprinkle the cheddar cheese over the top.
- Bake for another 10 minutes, or until the cheese is melted and bubbly.
Notes
- You can use any type of ground meat, such as ground turkey or ground chicken.
- Add other vegetables to the ground beef mixture, such as diced carrots, celery, or zucchini.
- Use different types of cheese, such as mozzarella or Monterey Jack.
- For a spicier dish, add a pinch of red pepper flakes to the ground beef mixture.
