- 2 Delicata Squash
- 1 cup Cooked Quinoa
- 1/2 cup Dried Cranberries
- 1/2 cup Chopped Pecans
- 1/4 cup Maple Syrup
- 2 tbsp Olive Oil
- 1 tsp Cinnamon
- Salt and Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Halve the delicata squash lengthwise and scoop out the seeds.
- Drizzle with olive oil, season with salt and pepper, and roast for 20 minutes.
- In a bowl, combine cooked quinoa, cranberries, pecans, maple syrup, and cinnamon.
- Stuff the roasted squash halves with the quinoa mixture.
- Return to the oven and bake for another 10 minutes, or until heated through.
- Serve warm.
Notes
- Add cooked sausage or ground beef for a heartier meal.
- Substitute walnuts for pecans.
- Use honey instead of maple syrup.
