Description

Enjoy this easy and delicious stuffed delicata squash recipe. It’s perfect for a seasonal dinner.


Ingredients

Scale
  • 2 Delicata Squash
  • 1 cup Cooked Quinoa
  • 1/2 cup Dried Cranberries
  • 1/2 cup Chopped Pecans
  • 1/4 cup Maple Syrup
  • 2 tbsp Olive Oil
  • 1 tsp Cinnamon
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the delicata squash lengthwise and scoop out the seeds.
  3. Drizzle with olive oil, season with salt and pepper, and roast for 20 minutes.
  4. In a bowl, combine cooked quinoa, cranberries, pecans, maple syrup, and cinnamon.
  5. Stuff the roasted squash halves with the quinoa mixture.
  6. Return to the oven and bake for another 10 minutes, or until heated through.
  7. Serve warm.

Notes

  • Add cooked sausage or ground beef for a heartier meal.
  • Substitute walnuts for pecans.
  • Use honey instead of maple syrup.
