- 5 lbs Yukon gold potatoes, peeled and quartered

- 1 (14.5 oz) can green beans, drained
- 1/2 cup vegetable broth
- 1/4 cup dried cranberries
- 2 tbsp olive oil
- 1 onion, chopped
- 1 cup cubed bread
- 1/2 cup chopped celery
- 1/4 cup fresh herbs (sage, thyme)
Instructions
- Boil potatoes until tender. Drain and mash.
- Heat cream and butter with garlic.
- Combine mashed potatoes with cream mixture. Season with salt and pepper.
- Serve cranberry sauce chilled.
- Sauté onion and celery in olive oil.
- Add bread cubes, herbs, and broth. Cook until softened.
- Mix green beans with stuffing and cranberries.
