- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 4 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, oil-packed, drained
- 2 tbsp fresh basil, chopped
Instructions
- Preheat oven to 375°F (190°C).
- In a shallow dish, mix flour, salt, and pepper. Dredge chicken breasts in the flour mixture.
- Heat olive oil and 2 tbsp butter in an oven-safe skillet over medium-high heat.
- Sear chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
- Add remaining 2 tbsp butter to the skillet. Add garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in Parmesan cheese and sun-dried tomatoes.
- Return chicken breasts to the skillet, nestling them in the sauce.
- Bake in the preheated oven for 15-20 minutes, or until chicken is cooked through and sauce has thickened.
- Garnish with fresh basil before serving.
Notes
- Serve over pasta, rice, or mashed potatoes.
- Add a pinch of red pepper flakes for a little heat.
- Use chicken thighs instead of breasts for a richer flavor.
