- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 2 (15-ounce) cans great Northern beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 2 cups cooked chicken, shredded
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes. Add garlic and green bell pepper and cook for 2 minutes more.
- Stir in cumin, oregano, and cayenne pepper. Cook for 1 minute.
- Pour in chicken broth, great Northern beans, and green chilies. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in shredded chicken and heat through.
- Remove from heat and stir in sour cream and cilantro.
- Serve hot.
Notes
- For a creamier chili, use an immersion blender to blend a portion of the chili before adding the chicken.
- You can use rotisserie chicken for a quicker meal.
- Adjust the amount of cayenne pepper to your preference.
