- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (15-ounce) can great northern beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on all sides.
- Remove chicken from pot and shred or dice. Set aside.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Pour in chicken broth, beans, green chilies, cumin, oregano, and cayenne pepper (if using). Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in shredded chicken and cook for another 5 minutes.
- Remove from heat and stir in sour cream and cilantro.
- Serve hot and enjoy!
Notes
- Adjust the amount of cayenne pepper to your desired level of spice.
- For a thicker chili, mash some of the beans before adding the chicken.
- Garnish with your favorite toppings like shredded cheese, avocado, or tortilla chips.
