Description

Enjoy this creamy and flavorful white chicken chili. It is easy to make and perfect for a comforting family meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15-ounce) can great northern beans, rinsed and drained
  • 1 (4-ounce) can diced green chilies
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned on all sides.
  2. Remove chicken from pot and shred or dice. Set aside.
  3. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  4. Pour in chicken broth, beans, green chilies, cumin, oregano, and cayenne pepper (if using). Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in shredded chicken and cook for another 5 minutes.
  7. Remove from heat and stir in sour cream and cilantro.
  8. Serve hot and enjoy!

Notes

  • Adjust the amount of cayenne pepper to your desired level of spice.
  • For a thicker chili, mash some of the beans before adding the chicken.
  • Garnish with your favorite toppings like shredded cheese, avocado, or tortilla chips.
