Description

Enjoy these moist and delicious zucchini chocolate chip muffins. They are easy to make and perfect for a quick breakfast or snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 1/2 cups shredded zucchini, squeezed dry
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine sugar, oil, vanilla, and eggs. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the zucchini and chocolate chips.
  6. Fill muffin liners about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Squeeze excess moisture from zucchini before adding to batter.
