Description

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large skillet, brown ground turkey over medium-high heat. Drain any excess fat.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Stir in zucchini, diced tomatoes, oregano, salt, and pepper.
  4. Bring to a simmer, reduce heat, and cook for 10-15 minutes, or until zucchini is tender.
  5. Sprinkle with Parmesan cheese before serving (optional).

Notes

  • For extra flavor, add a pinch of red pepper flakes.
