- 2 medium zucchini, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- In a large skillet, brown ground turkey over medium-high heat. Drain any excess fat.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in zucchini, diced tomatoes, oregano, salt, and pepper.
- Bring to a simmer, reduce heat, and cook for 10-15 minutes, or until zucchini is tender.
- Sprinkle with Parmesan cheese before serving (optional).
Notes
- For extra flavor, add a pinch of red pepper flakes.
