Description

Quick and easy zucchini pizza bites are a low-carb snack.


Ingredients

Scale
  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup pepperoni slices, halved
  • 1/4 cup black olives, sliced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, toss zucchini rounds with olive oil, garlic powder, salt, and pepper.
  3. Arrange zucchini slices in a single layer on a baking sheet.
  4. Bake for 10 minutes.
  5. Remove from oven and top each slice with pizza sauce, mozzarella cheese, pepperoni, and olives.
  6. Return to oven and bake for 5-7 minutes, or until cheese is melted and bubbly.
  7. Let cool slightly before serving.

Notes

  • For extra flavor, sprinkle with Italian seasoning before baking.
  • Use your favorite pizza toppings.
