Quick and easy zucchini pizza bites are a low-carb snack.
Ingredients

- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup pepperoni slices, halved
- 1/4 cup black olives, sliced
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, toss zucchini rounds with olive oil, garlic powder, salt, and pepper.
- Arrange zucchini slices in a single layer on a baking sheet.
- Bake for 10 minutes.
- Remove from oven and top each slice with pizza sauce, mozzarella cheese, pepperoni, and olives.
- Return to oven and bake for 5-7 minutes, or until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- For extra flavor, sprinkle with Italian seasoning before baking.
- Use your favorite pizza toppings.
